Soft Neck

Generally has a more mild taste, similar to garlic found at the grocery store. Soft neck garlic bulbs are often seen bundled and braided, as they are longer storing bulbs.

Hard Neck

Tends to have a spicier, more pungent flavor. Unlike soft neck, hard neck garlic produces a flower stalk in spring called a "scape". Scapes are used in cooking for their mild garlic flavor; prepare as you would asparagus. Removing scapes will encourage larger bulb production. Shorter storage life than soft neck varieties.
